TURKEY BROTH-STEWED RICE TOPPED WITH TOASTED NUTS

This recipe is so special because the fluffy white grain rice is cooked in fresh, flavorsome, homemade turkey broth. This allows the rice to soak up the turkey, celery, and onion flavors providing a deeply-satisfying umami flavor profile. To take things even further, some ground beef is stewed along with the rice and for contrast in texture, and at the very end, the pillowy rice is topped with an assortment of toasted golden nuts.

Turkey broth-stewed rice topped with toasted nuts 

  • 3 cups uncooked, short grain Egyptian rice

  • ½ cup fresh cashew nuts

  • ½ cup fresh almond nuts, purchased without their skin on

  • 3 tablespoons olive oil

  • 150 grams ground beef

  • 2 teaspoons Allspice

  • 10 cracks fresh black pepper

  • 1 teaspoons salt

  • 3 cups turkey broth (see Roast Turkey recipe)

Step 1: Prepare the rice and toast the nuts

Soak the rice in room temperature water for 20 minutes. Once soaked, drain and discard the water. In a saucepan over medium high heat, toast the cashews and almonds while constantly stirring until browned.  You don’t need to add any oil to the saucepan as the nuts have their own oils which release when heated. Once toasted, place the nuts on a paper towel to be used to garnish the rice. 

Step 2: Preparing the rice

Place a large stockpot on your stovetop and set the heat to medium high. Add the olive oil. Once it heats up and you can smell its perfume, add the ground beef, Allspice, black pepper, and salt, and stir until the beef is browned. Add the rice to the beef and stir for another 2 minutes until all the ingredients are combined. 

Step 3: Boil, cover, and wait

Add the turkey broth to the rice and bring it to a boil, stirring occasionally. Once it s]tarts to boil, lower the heat to medium, cover the pot with a lid, and leave it to cook for 20 minutes. Keep the lid on for an additional 5 minutes after the rice has cooked and after you have turned  off the heat. Serve the rice steaming hot and topped with the assortment of toasted nuts.
