There’s something poetically forgiving about over ripped bananas. They could represent a failed attempt to eat more fiber or anther fresh produce wasted, but actually, they represent a reward for your procrastination. They’re no longer just a banana, but an earthy, dark chocolate chunk filled banana bread waiting to be baked.  Maybe it’s a refreshed version of when life gives you lemons. When procrastination gives you over ripped bananas, make banana bread.

This recipe calls for brown sugar only, which boosts the caramelized flavors and gooey textures. When mashing your ripped bananas and chopping your dark chocolate, keep the consistency irregular so every bite is different.  It’s also easy to make it your own, add some nuts, chocolate, seeds, raisons, or your favorite spice, everything works. Now all you need is some procrastination (we all have that), some coffee, some banana bread and that’s a 5pm well spent.
